Contient-il r\u00e9ellement des vitamines et des min\u00e9raux qui contribuent \u00e0 une vie longue et saine\u00a0? Et surtout\u00a0: puis-je consid\u00e9rer ma consommation quotidienne de chocolat comme une habitude saine\u00a0?<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Mon h\u00e9ro\u00efne personnelle, Jeanne Calment, aurait mang\u00e9 jusqu'\u00e0 un <a href=\"https:\/\/www.businessinsider.es\/archivo\/como-llegar-122-anos-3-secretos-mujer-vieja-mundo-1204368\">un kilo de chocolat chaque semaine<\/a> et elle a v\u00e9cu jusqu'\u00e0 122 ans\u2026 mais je ne pense pas que cette recommandation soit soutenue par la communaut\u00e9 m\u00e9dicale.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Voyons pourquoi le chocolat noir a la r\u00e9putation d'\u00eatre un superaliment, et comment l'int\u00e9grer au mieux \u00e0 votre alimentation pour en tirer le maximum de bienfaits sans en abuser.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">La consommation quotidienne de chocolat noir contribue-t-elle \u00e0 faire baisser la tension art\u00e9rielle\u00a0?<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Le chocolat noir a acquis du prestige gr\u00e2ce \u00e0 ses avantages pour la <a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/28439881\/\">la pression art\u00e9rielle<\/a>C'est gr\u00e2ce \u00e0 sa forte teneur en th\u00e9obromine et <a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/40217225\/\">flavono\u00efdes<\/a>, une classe de polyph\u00e9nols. Ces deux compos\u00e9s sont b\u00e9n\u00e9fiques pour la sant\u00e9 cardiaque.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Les flavonols favorisent la production d'oxyde nitrique, ce qui contribue \u00e0 <a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/28439881\/\">ouvrir les vaisseaux sanguins<\/a> et ainsi am\u00e9liorer la circulation sanguine, r\u00e9duire la pression art\u00e9rielle et minimiser le risque de maladies cardiovasculaires. Les flavonols sont \u00e9galement pr\u00e9sents dans d'autres aliments et boissons tels que <a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/24734311\/\">les m\u00fbres, les l\u00e9gumineuses<\/a>, le <a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/34574159\/\">vin rouge et le th\u00e9<\/a>.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Le cacao frais contient 10 % de flavonols, mais cette teneur est s\u00e9v\u00e8rement r\u00e9duite lors de la torr\u00e9faction et de la transformation en chocolat. De plus, les bienfaits du cacao, et notamment du chocolat, sont <a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/34578786\/\">discutables<\/a> car certaines des \u00e9tudes initiales \u00e9taient financ\u00e9es par de grandes corporations de chocolat multinationales. Dans des \u00e9tudes mieux con\u00e7ues et exemptes de ces influences externes, les bienfaits du cacao \u00e9taient <a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/28439881\/\">moins importants<\/a>, si bien ils existaient toujours.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Facteurs influen\u00e7ant le profil nutritionnel du chocolat<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">La vari\u00e9t\u00e9 du cacao et le processus de fabrication du chocolat, qui comprend des \u00e9tapes telles que la fermentation, le s\u00e9chage, la torr\u00e9faction et le conchage, <a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/34047627\/\">affectent sa teneur en nutriments<\/a>. Cela signifie que tous les chocolats ne contiendront pas le <a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/39856922\/\">m\u00eame niveau de polyph\u00e9nols<\/a> ni les m\u00eames bienfaits. Il faut consid\u00e9rer:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>La teneur en sucre :<\/strong> Plus un chocolat contient de sucre, moins il est sain. Pour une tablette de chocolat noir, on peut soustraire le pourcentage de cacao afin de conna\u00eetre sa teneur en sucre. Par exemple, une tablette \u00e0 70 % de cacao contient 100 \u2013 70 = 30 % de sucre. Pour une tablette de chocolat au lait, on peut consulter l'\u00e9tiquette nutritionnelle pour conna\u00eetre sa teneur en sucre.<\/li>\n\n\n\n<li><strong>Vari\u00e9t\u00e9 de cacao :<\/strong> Le cacao est une plante qui vient dans <a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/34574159\/\">une dizaine de vari\u00e9t\u00e9s<\/a>. La <a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/32942899\/\">vari\u00e9t\u00e9 de cacao<\/a> affecte le profil nutritionnel : par exemple, le cacao national contient plus de m\u00e9thylxanthines (caf\u00e9ine et th\u00e9obromine), tandis que le cacao criollo contient plus d'acides amin\u00e9s.<\/li>\n\n\n\n<li><strong>Terroir :<\/strong> Le pays et le territoire d'origine, ainsi que <a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/34574159\/\">le soleil, l'altitude, le sol et d'autres facteurs<\/a> peuvent influencer les niveaux de phenols.<\/li>\n\n\n\n<li><strong>R\u00e9colte :<\/strong> Une <a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/34405409\/\">f\u00e8ve de cacao plus m\u00fbre<\/a> au moment de la r\u00e9colte, la teneur en flavonols, cat\u00e9chines et ph\u00e9nolines est g\u00e9n\u00e9ralement plus \u00e9lev\u00e9e.<\/li>\n\n\n\n<li><strong>Fermentation :<\/strong> Les polyph\u00e9nols et la th\u00e9obromine sont <a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/34574159\/\">amers et astringents<\/a>. Ce sont des nuances que nous cherchons \u00e0 \u00e9liminer pour produire un chocolat aux ar\u00f4mes fins. De m\u00eame, la fermentation, le s\u00e9chage, la torr\u00e9faction et le broyage sont des \u00e9tapes n\u00e9cessaires pour faire ressortir les ar\u00f4mes d\u00e9licieux et complexes que l'on associe \u00e0 un bon chocolat \u2013 mais ces \u00e9tapes <a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/32942899\/\">affectent \u00e0 la teneur en polyph\u00e9nols, vitamines et autres acides.<\/a> Lors de la <a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/34574159\/\">fermentation<\/a>, ces compos\u00e9s interagissent entre eux et cr\u00e9ent de nouveaux compos\u00e9s.<\/li>\n\n\n\n<li><strong>Torr\u00e9faction :<\/strong> La torr\u00e9faction est n\u00e9cessaire pour \u00e9liminer les agents pathog\u00e8nes et constitue donc une \u00e9tape incontournable si l'on veut garantir un produit sans danger pour la consommation humaine.
