Le monde du chocolat comprend plusieurs \u00e9tapes, de la r\u00e9colte \u00e0 la tablette ou le bonbon que vous d\u00e9gustez. Les agriculteurs plantent le cacaoyer et, lorsque le fruit est m\u00fbr, ils le r\u00e9coltent, l'ouvrent et en extraient les graines ainsi que le mucilage, la partie blanche qui les entoure. Ensuite, les f\u00e8ves sont torr\u00e9fi\u00e9es, d\u00e9cortiqu\u00e9es, concass\u00e9es et moulues pendant 24 \u00e0 72 heures jusqu'\u00e0 obtenir une p\u00e2te lisse. Il y a des fabricants qui ajoutent encore du beurre de cacao ou des l\u00e9cithines pour am\u00e9liorer la texture. C'est rare de voir de la vanille dans une tablette bean-to-bar, car le but de la vanille est de cacher les d\u00e9fauts d'un cacao de mauvaise qualit\u00e9.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Chaque \u00e9tape, de la culture \u00e0 la fabrication des tablettes, influence la qualit\u00e9 du chocolat. Selon la vari\u00e9t\u00e9 de cacao, il faudra ajuster les protocoles de fermentation, le temps de s\u00e9chage, la temp\u00e9rature de torr\u00e9faction et le conchage. Deux fabricants bean-to-bar peuvent acheter la m\u00eame f\u00e8ve de cacao et obtenir deux chocolats tr\u00e8s diff\u00e9rents, tout comme la saveur d'une f\u00e8ve de cacao peut varier selon les \u00e9tapes de fermentation et le s\u00e9chage.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Les grandes entreprises ach\u00e8tent des f\u00e8ves de cacao en gros \u00e0 bas prix. Ces f\u00e8ves proviennent souvent de vari\u00e9t\u00e9s de cacao courantes et peuvent pr\u00e9senter des d\u00e9fauts tels que des moisissures ou une mauvaise fermentation. Il est donc souvent n\u00e9cessaire de les torr\u00e9fier \u00e0 haute temp\u00e9rature, d'ajouter des ingr\u00e9dients comme de la vanille pour masquer les ar\u00f4mes ind\u00e9sirables, voire d'alcaliniser le chocolat pour en \u00e9liminer l'acidit\u00e9. \u00c0 l'inverse, les producteurs artisanaux de f\u00e8ves de cacao \u00e0 la tablette recherchent g\u00e9n\u00e9ralement des f\u00e8ves d'origine unique provenant de petites exploitations. Ils s\u00e9lectionnent les meilleures f\u00e8ves et les torr\u00e9fient \u00e0 des temp\u00e9ratures relativement basses par rapport au chocolat industriel afin de pr\u00e9server l'ar\u00f4me naturel du cacao.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Que fait un chocolatier ?<\/h3>\n\n\n\n<p class=\"wp-block-paragraph\">Le m\u00e9tier de chocolatier allie la technique du chocolat \u00e0 l'art de la p\u00e2tisserie.
